There were a number of small quarries along the 'land side' of the canal. 
'Down Along the Old Bel-Del' by Warren F. Lee has a photo of this area on
page 184, upper photo.  The caption says there was a canal basin south of
Lambertville at a quarry; it shows the road going up to cross over a
typical bridge to clear the entrance to the basin.  The railroad built a
bridge over the canal in 1900 to serve this quarry  The bridge was known
as 'Jack's Trestle'.  The map in the endpapers shows the Mercer County
Work House several miles south of Lambertville, north of a locality named
Moores, south of Moore Creek and north of Strawberry Hill.
