You have to be careful about what format you use for scanning. The most
popular is .JPG. That format uses a compression algorithm to make the
files smaller but that also means that you could lose some of the image
definition each time you work on the file. My publisher specifies .TIF
files which don't use the compression. The files are bigger but you don't
lose part of the image each time you do some work.
