I would echo Paul's comments, but again it depends on location. If you're modeling NE Ohio with all the ore, coal and steel traffic, you're going to have a higher proportion of EL cars. If it's Buffalo east, there's going to be the CN, CP and Maine boxcars with newsprint, also auto parts cars coming off the old Wabash and PM with mostly Eastern roadnames: N&W, EL, Chessie/C&O/B&O, DT&I, PC/PRR/NYC, depending on era. EL was primarily a terminating carrier for east-west traffic, and generally, loads went in the originating road's cars. So you're going to have lots of western roadnames. Remember also that almost all tank cars and many CH's were privately owned (X-suffix). A good example is the consist sheet for SF-100 of 2/19/76. This was a primary Chicago-Croxton train on the latter-day EL. I notice there's a big predominance of Penn Central equipment in mid-to-later EL years (after all, they had the most freight cars nationwide!). And of course, depending on the area you're modeling, you'll see certain roads' cars over and over again (CP and CN newsprint cars, State of Maine boxcars, etc.) I'm trying to stick with the "20% EL" rule and mixing up the rest.
