The Erie from Monroe, NY to Goshen is a nicely paved bike trail. I suggest parking at Chester station/museum and exploring the route in either direction from there. The Greycourt area is pretty interesting, with the former L&HR bridge, the connector coming down to the Erie, complete with old wooden crossbucks at the Greycourt Ave. crossing, and the active (last time I was there, anyway) team track next to the old main for inbound fertilizer and, I think, outbound onions. Clayton Delaney's on Main St. in Chester is a good place for lunch or dinner, while you're there.
